I'm an avid book lover and cookbook collector. My heart always seems to flutter a bit whenever I approach a bookstore or library.
Healthy cookbooks have recently become my favorite category. It's fun to discover how easy and delicious healthy cooking can be. To me, healthy means as natural as possible, but I also take into consideration how easy it is to make and how good it tastes. Life is busy enough—Who has time for complicated approaches to eating and cooking?
I believe cooking is best when it's easy, healthy, fun, and delicious and I find that these are the kinds of healthy cookbooks that attract me. Here's a list of some of my current favorite healthy cookbooks:
A fun approach to sneaking healthy fruit and vegetable purees into everyday foods like meatloaf and muffins. Jessica provides directions for preparing purees from scratch, but since I am a lazy cook at heart with limited freezer space, I opt for organic baby food purees instead. These work extremely well while saving a time-consuming step.
If you want to eat healthier and prefer tasty food that isn't boring, this is the book for you. Some recipes call for less common foods like quinoa and buffalo, and all are flavored and free of processed ingredients.
If you haven't seen Ellie Krieger on the Food Network you are missing out! She is a nutritionist who loves to cook and eat and appears on the Food Network every Saturday with several deliciously healthy recipes. She has an appealing, friendly, down-to-earth style that is less over-the-top than so many current Food Network Favorites. Everything I've made from this cookbook has been easy and tasty.
This colorful paperback, organized by season, is brimming with recipes and pictures for quick and delicious meals focusing on fresh simple ingredients. Most of the recipes can be made in 45 minutes or less.
This healthy cookbook is packed with recipes for simple, delicious food that is easy to prepare. Its focus is on real food and balanced meals with no chemically-enhanced, artificial ingredients in site. If you need a cookbook with pictures, this one probably isn't for you, but if you are looking for great, easy, healthy, everyday meals, you owe it to yourself to check it out.

While this can't be called a healthy cookbook, Kathleen does devote the whole last chapter to healthy alternatives like energy bars and multigrain muffins that contain healthy whole grains and natural sweeteners.
