Baked Oatmeal Recipes

Quick and Easy Healthy Baked Oatmeal Recipes

I've tried several baked oatmeal recipes and this is my favorite. I like to make a batch of this delicious and healthy baked oatmeal on Sunday to re-heat and enjoy during weekday mornings. It's the kind of oatmeal recipe that can be varied according to your tastes and what's in season. If you are cooking oatmeal for your family, you may want to prepare a double batch in a 9 X 13 baking pan.

Quick and Easy Recipes: Healthy Baked Oatmeal

Combine in a medium bowl:

  • 2 cups rolled oats
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/3 cup raisins or other chopped, dried fruit of your choice
  • 1/4 cup chopped walnuts


Combine in a separate bowl:
  • 1 cup milk or soy milk
  • 1/2 cup applesauce
  • 2 tablespoons oil or melted butter
  • 1 egg, beaten
  • 1 teaspoon vanilla


Preheat oven to 350F degrees.

Lightly grease a 8 X 8 X 1-inch baking pan.

Add the oat mixture to the bowl of liquid ingredients and stir well to combine.

Pour mixture into a greased baking pan.

Bake at 350F degrees for 25 minutes.

Serve warm with milk.

Servings: 3-4



Variations on Recipes for Healthy Baked Oatmeal:

  • Substitute 1/4 cup nut butter for the oil
  • Substitute 1/2 cup mashed bananas for the applesauce
  • Substitute 1/2 cup fruit cocktail or peaches for the applesauce
  • Add 1 apple, chopped or shredded
  • Substitute coconut milk for regular milk, pureed mango for the applesauce, and add a handful of shredded coconut
