If you are cooking oatmeal for your family, you may want to prepare a double batch in a 9 X 13 baking pan.
Quick and Easy Recipes: Healthy Baked Oatmeal
Combine in a medium bowl:
2 cups rolled oats
1/3 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/3 cup raisins or other chopped, dried fruit of your choice
1/4 cup chopped walnuts
Combine in a separate bowl:
1 cup milk or soy milk
1/2 cup applesauce
2 tablespoons oil or melted butter
1 egg, beaten
1 teaspoon vanilla
Preheat oven to 350F degrees.
Lightly grease a 8 X 8 X 1-inch baking pan.
Add the oat mixture to the bowl of liquid ingredients and stir well to combine.
Pour mixture into a greased baking pan.
Bake at 350F degrees for 25 minutes.
Serve warm with milk.

Substitute 1/4 cup nut butter for the oil
